Born on November 20, 1940, to Pablo Sr. and Clotilde Diaz in Uvalde, Texas. Carmen passed away peacefully on December 30, 2024, surrounded by many loved ones. She was a one of kind woman whose spirit and heart left an everlasting mark on everyone who knew her.

A devoted spouse, loving mother, grandmother, sister, aunt, and a true force of nature. Carmen was known for her fiery spirit, quick wit and boundless love. Her passions included loving others wholeheartedly and she loved to feed all who entered her home. Every Saturday you could arrive at her house to a freshly baked cake. Sunday menu always included her famous chicken and rice, beans and chicharros.
